Cinnamon Buns with Cream Cheese Icing
- 1-1/4 yeast (1 pkg)
- 1 cup warm milk
- 1/2 cup sugar
- 1/3 cup melted butter or margarine
- 1 tsp salt
- 2 eggs
- 4 cups flour
- 1 cup brown sugar, packed
- 2-1/2 tbsps cinnamon
- 1/3 cup butter
- 7 tbsps butter or margarine, softened
- 1-1/2 cups icing sugar
- 1/2 cup (2 oz) of cream cheese – more if you desire strong cream cheese flavour
- 1/2 tsp vanilla
Dissolve yeast in milk; mix in sugar, butter, salt, eggs and flour – combine well.
Turn dough out onto a lightly floured surface, knead into a large ball. Cover and let rise 1 hour.
Preheat oven to 400F.
Combine brown sugar and cinnamon for filling. Roll dough into a 21″ x 16″ wide rectangle. Rub softened butter or margarine generously over dough. Sprinkle sugar/cinnamon mixture evenly across buttered surface then roll from long side to short side; pinch ends.
Using a sharp knife, cut into 1-inch wide rolls. For fewer, bigger rolls, cut them wider.
Grease your preferred baking pan(s) and fill with rolls. Let rise for an additional 30 minutes.
Bake rolls until slightly browned and not doughy – do not overbake. Cover rolls with icing.
Cream together all ingredients with an electric mixer. Spread on hot rolls.
