Crispy Cauliflower & Hot Parmesan Dip
From How Sweet It Is
- 1 head cauliflower
- 2 tablespoons olive oil
- salt & pepper to taste
Preheat oven to 425F
Chop cauliflower into small florets and place on baking sheet. Drizzle with oil; season with salt and pepper.
Roast for 45 minutes or until golden brown, rotating baking sheet after 20 minutes.
Hot Parmesan Dip:
- 4 oz cream cheese, softened
- 1/2 cup plain greek yogurt
- 1 tbsp parsley
- 1/3 cup fresh grated parmesan cheese
Preheat oven to 375F
Combine all ingredients in a bowl and whisk together or mix with electric mixer. Spoon into small ramekin and bake for 10-15 minutes, or until top is golden brown and bubbly.
