Smothered Chicken
Serves 4

  • 2-3 boneless, skinless chicken breasts
  • olive oil, for frying
  • 1/2 cup butter or margarine
  • 1 medium onion, finely chopped
  • 1 carrot, chopped
  • 1/2 lb mushrooms, chopped
  • 6 tbsp flour
  • salt and pepper, to taste
  • 1-1/2 cups chicken stock
  • 1-1/2 cups milk

Cut up chicken breasts; fry in olive oil until cooked then set aside. Add to pan onion, carrot, and mushrooms and sautee until slightly tender. Add butter; allow it to melt. Add flour, salt and pepper, stir until becomes thick coating in pan. Slowly add the chicken stock and milk; cook sauce until thick. Add chicken and simmer for 1 hour. Serve over noodles.
