Yield: One 8 x 8 pan; approximately 16 squares
- 1 cup margarine
- 2 tbsp cocoa
- 1/4 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 1/2 tsp salt
- 2 cups graham wafer crumbs
- 1 cup flaked coconut
- 4 tbsp butter
- 1 tbsp milk (a little more if needed)
- 2 cups icing sugar, sifted
- 1 tsp almond extract
- 1 square or 1 oz semi-sweet chocolate
- 1/2 tsp butter
Combine first 6 ingredients in a double boiler. Cook for 5 minutes; remove from heat. Add graham wafer crumbs and coconut. Press into an 8 x 8 pan and chill 1 hour.
For Middle Layer:
Mix all ingredients together and spread over cooled base.
For Top Layer:
Melt chocolate and butter together. Drizzle over middle layer surface.
Allow to chill for another 30 minutes to 1 hour before cutting into squares.
