Apple Streusel Loaf
Yield: 1 loaf

  • 1/2 cup butter or margarine, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup milk
  • 1 cup peeled and grated Granny Smith apple, packed
  • 1 Granny Smith apple, peeled and thinly sliced
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts

Topping:

  • 1/3 cup brown sugar, packed
  • 1/2 tsp cinnamon

Preheat oven to 350F

Grate apple; set aside. Cream butter and sugar. Add each egg separately, beating until smooth each time. Add vanilla and milk, then grated apple.

In a separate bowl, mix flour, baking powder, soda, salt and walnuts. Pour into butter mixture, stir only to moistened.

Pour half of batter into a greased loaf pan. Spread apple slices evenly on surface; pour remaining batter overtop.

Combine brown sugar and cinnamon for topping; sprinkle over the loaf.

Bake for 1 hour and 10 to 1 hour and 20 minutes, or until a toothpick inserted in center comes out clean.
