Easy Maple Pecan Pie (with even easier crust!)
Yield: 1 9-inch pie

Crust:

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons white sugar
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 tablespoons milk

Preheat oven to 400F.

Place all ingredients in 9-inch pie pan; stir together with fork. For a sweeter crust, add more sugar.Pat mixture into bottom and sides of pan; dock crust with fork. Bake for 15 minutes or until golden brown.

Filling:

  • 1 cup pure maple syrup
  • 3/4 cup brown sugar, packed
  • 3 large eggs
  • 1/4 cup white sugar
  • 3 tablespoons melted butter or margarine
  • 1-1/2 teaspoons vanilla
  • 1-1/2 cups chopped pecans

Preheat oven to 350F.

Whisk maple syrup, brown sugar, eggs, white sugar, melted butter/margarine, flour and vanilla. Mix in chopped pecans. Pour into pie crust.

Bake for 50 to 60 minutes, or until filling is set and slightly puffed (center will jiggle slightly). Cool completely or refrigerate.
