Whole Wheat Flax Chocolate Chip Cookies
Yield: approx 2 dozen

  • 1/2 cup margarine
  • 1 cup brown sugar
  • 1 egg
  • 1/2 tsp vanilla
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1-1/4 cups whole wheat flour
  • 1/8 cup ground flax
  • 1 cup semi-sweet or dark chocolate chips

Preheat oven to 350F

Cream margarine and sugar together; add egg and vanilla. Stir in dry ingredients – flour, flax, baking soda, and salt. Gently fold in chocolate chips. Spoon teaspoon sized dollops onto ungreased cookie sheet and bake for approximately 8 minutes.
