Cheerio Banana Muffins

Cheerio Banana Muffins
Adapted from The Chew

Yield: 12 muffins

  • 1 cup whole wheat flour
  • 1/4 cup ground flax
  • 2 cups of Cheerios cereal, roughly crushed
  • 3/4 tsp baking soda
  • 1 tsp baking powder
  • 1/3 cup brown sugar, packed
  • 2/3 cups milk
  • 1 egg white
  • 1 cup mashed ripe banana (about 2-3 medium sized)
  • 3 tbsp vegetable oil

Preheat oven to 400.

Combine dry ingredients; in separate bowl combine wet. Add wet to dry, stirring only to moisten. Scoop into greased or paper-lined muffin tin. Bake for 18 to 22 minutes, or until toothpick inserted in center comes out clean.
