Chili

Chili
Serves 6

  • 1lb (500g) extra lean ground beef
  • 1/2 medium onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, minced
  • 1/2 tsp pepper
  • 1 tsp chili powder (more/less to taste)
  • 1/2 tsp cayenne powder (more/less to taste)
  • 2  cans no added salt tomato sauce (398ml each)
  • 1 can tomato paste (156ml)
  • 1 can diced tomatoes, no salt added (796ml)
  • 1 can no salt added red kidney beans (590ml), drained and rinsed until water is clear
  • 1 can black turtle beans (590 ml), drained and rinsed until water is clear

In a large saucepan, thoroughly cook ground beef until browned. Add onion, garlic and green pepper; cook until onion begins to turn translucent. Add pepper, chili powder and cayenne. Add diced tomatoes, both cans of beans, tomato sauce, and tomato paste; mix well. Simmer on low for 1 hour.
