Feta and Sundried Tomato Stuffed Zucchini
- 1 large zucchini
- 1/2 cup feta cheese
- 3 to 4 sundried tomatoes in oil, finely chopped
- 1 clove garlic
- Dash of pepper
Preheat oven to 350F
Slice zucchini lengthwise and remove a small amount of pulp in the center so that there is room to fill them (center slightly hollowed out much like a canoe or boat). In a bowl, cream feta cheese; add chopped sundried tomatoes, garlic and pepper until well combined. Fill zucchini “boats” with feta cheese mixture. Place on baking sheet and bake for approximately 20 minutes.
Variation: hollowed out zucchini medallions.
