Quinoa and Chickpea Salad

Quinoa and Chickpea Salad
From The Chew
Serves 4

Salad:

  • 2 cups cooked quinoa, cooked to package instructions (1/2 cup uncooked quinoa will yield approx 2 cups cooked)
  • 3/4 cup chickpeas (drained and rinsed)
  • 1/4 cup dried cranberries
  • 1/4 cup scallions (thinly sliced)

Dressing:

  • 3 tbsp extra virgin olive oil
  • juice of 1/2 lemon
  • 1 tsp whole grain mustard
  • salt and pepper to taste
  • 1/2 tsp maple syrup

Mix quinoa, chickpeas, cranberries and scallions; set aside. Mix olive oil, lemon juice, mustard, salt and pepper, and maple syrup; pour onto quinoa mixture, blend well, and serve.
