Dark Chocolate Chunk Granola
- 3 cups oats
- 1/2 cup shredded unsweetened coconut
- 1/8 cup unsalted sunflower seeds
- 1/4 cup unsalted pumpkin seeds
- 1/8 cup chia seeds
- 1/4 cup ground flax seed
- 1/2 cup chopped pecans
- 1/2 cup chopped dark chocolate (70%)
- 1/4 cup organic or brown sugar
- 1/2 tsp cinnamon
- 1 tsp vanilla
- 1/4 cup oil
- 1/4 cup pure maple syrup
Preheat oven to 300F
Combine all dry ingredients; in separate bowl, blend together vanilla, oil and maple syrup. Pour liquid mixture over dry, mixing until all the dry is moistened. Pour granola onto a parchment-lined cookie sheet in an even layer. Bake for 20 minutes. Allow granola to cool completely (so that chocolate sets again) before transferring to a glass mason jar for storage. Serve withfresh fruit, milk, or on top of plain Greek yogurt.
