“Healthier” Peanut Butter Cups

Yield: approx 14

  • 1/4 cup plus 2 tbsps cocoa powder
  • 3 tbsps coconut oil
  • 3 tbsps natural peanut butter
  • 3/4 tsp vanilla
  • 5 to 6 tbsps pure maple syrup

Heat cocoa powder, coconut oil, and peanut butter in a saucepan over low heat, stirring occasionally until mixture is completely smooth and liquefied. Remove pan from heat and stir in vanilla and maple syrup. Pour into lined mini-muffin pan, then freeze until set – about 10 to 20 minutes. Store in the fridge or freezer.
