No-Bake Chewy Coconut Haystacks
Adapted from: Free Coconut Recipes
- 2 tbsps butter
- 1/2 cup coconut oil (use just under 1/2 cup to avoid the oil pooling)
- 1/4 cup cocoa
- 1/4 cup maple syrup or honey
- 1/4 cup organic sugar
- dash of salt
- 2 tsp vanilla
- 2 cups shredded unsweetened coconut
Melt oil, butter and cocoa together over med-low heat. Once melted, add in syrup, salt and sugar; cook until sugar is dissolved and mixture thickens. Remove from heat and stir in vanilla and coconut. Scoop by tablespoon onto parchment lined cookie sheet, and place in fridge or freezer to set.
Note: I have tried reducing the coconut oil to 1/3 cup and organic sugar to 1/8 cup and they are still just as delicious!
