Chunky Monkey Muffins (Gluten Free)

Chunky Monkey Muffins (Gluten-Free)
Adapted from Coconut Recipes

Yield: 12

  • 1/2 cup coconut flour, sifted
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 6 eggs
  • 1/3 cup pure maple syrup
  • 1/3 cup coconut oil, melted (or other oil)
  • 1 tbsp vanilla
  • 3/4 cup mashed banana
  • 1/2 cup chopped pecans
  • 1/3 cup unsweetened shredded coconut (or unsweetened coconut flakes)
  • 1/3 cup chopped dark chocolate (70%)

Preheat oven to 350F

Combine wet ingredients in large mixing bowl. Sift in dry ingredients and whisk until blended. Fold in nuts, coconut, and dark chocolate. Scoop into greased or lined muffin tins; sprinkle additional pecans and coconut on top. Bake for 20 to 30 minutes, or until toothpick inserted in center comes out clean.
