Orange Rice

Orange Rice

Serves 4

  • 2-2/3 cups reduced salt or no-salt added chicken broth
  • 1-1/2 tsps grated orange rind
  • 1/4 tsp each salt and pepper
  • 1-1/3 cups basmati rice
  • 1 large carrot, grated

Bring chicken broth, orange rind, and salt and pepper to a boil. Stir in rice and grated carrot. Simmer for 25 minutes, or until liquid is fully absorbed. Fluff with fork, and serve.
