Crispy Chickpea Patties

Crispy Chickpea Patties

  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1/4 cup chopped fresh parsley
  • 1 can (190z/540ml) chickpeas, well rinsed
  • 1 egg
  • 1/4 cup flour
  • 1/2 tsp salt
  • 1/2 tsp pepper

In frying pan, sautee onion, cumin and garlic until onion is soft.

In food processor (or with immersion blender), puree chickpeas until smooth. Transfer to a large bowl; add in onion mixture, parsley, egg, salt and pepper, and flour. Scoop into tablespoon sized patties; fry until browned on both sides – about 2 minutes per side. Drain on paper-towel lined plate; serve with Greek yogurt.

Note: I omitted the flour and replaced it with 2 tsps of coconut flour. They were quite tasty, but a little crumbly. With this substitution, an extra egg might be in order. Either that, or use only 1 tsp of coconut flour instead.
