Goat Cheese Stuffed Chicken Breasts
Adapted from Canadian Living

Serves 4

  • 6 oz (170g) goat cheese
  • 2 cloves garlic, minced
  • 1 green onion, minced
  • 1 tsp summer savory (or thyme)
  • 1 tsp marjoram
  • pinch cayenne pepper
  • 4 boneless skinless chicken breasts
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper

Preheat oven to 375F

Blend goat cheese, garlic, onion, summer savory and marjoram until smooth.

With knife held horizontally and starting at thinner side, cut chicken in half almost but not all the way through; open like book. Spread 1 side of each with one-quarter of the cheese mixture. Fold uncovered side over; secure edge with small skewer or toothpicks. Sprinkle with salt, pepper, cumin and paprika. Sautee in frying pan until golden brown on each side; transfer to oven and bake until thoroughly cooked.
