Ginger Beef and Broccoli

  • 1 lb (454g) of beef top sirloin steak, fat trimmed and sliced into thin strips
  • 1 cup low sodium beef broth
  • 1 cup thinly sliced carrot
  • 1/2 cup thinly sliced celery
  • 3 tbsp teriyaki stifry sauce
  • 1 tbsp finely grated fresh ginger root
  • 1 tsp sesame oil
  • 1/4 tsp crushed chili peppers
  • 2 garlic cloves, minced
  • 3 cups (uncooked) egg noodles
  • 2 cups small broccoli florets
  • 1 cup sliced red pepper

Preheat oven 375F

Combine steak, broth, carrot, celery, teriyaki sauce, ginger, sesame oil, chilis, and garlic in a greased 9×13 pan. Bake, covered, for about 30 minutes until carrot and celery start to soften.

Cook egg noodles as per package instructions. Drain; add to beef mixture. Add broccoli and red pepper then bake, uncovered, for about 10 minutes until broccoli is tender-crisp.
